As a child, Roze spent time recovering from open heart surgery as the result of a congenital condition. During this time, Rōze looked towards the kitchen as a place of healing and recovery, leading to his lifelong passion of the culinary arts. At age 18, Roze packed up his knife kit and enrolled in Le Cordon Bleu. From there, he went to work in some of the most prestigious kitchens in the world including Eleven Madison Park and The NoMad.
